{ Pumpkin Pie Oatmeal – “Protein Overnight Oats” }

It took me ages to try “overnight oats.” I wasn’t sure what to expect. Once I learned how versatile these oatmeal recipes were and that I could include pumpkin in the mix, I was sold. When the oats soak overnight in creamy almond milk and pumpkin puree, you wake up to fall breakfast already made! A quick zap in the microwave and you could be eating them on your way out the door.

Ingredients for 1 Serving:

  • 1/4 C pumpkin puree
  • 1/2 C Oatmeal
  • 1/2 C almond milk
  • 1 T cinnamon
  • 1/2 T pumpkin pie spice
  • 1 scoop vanilla whey protein
  • 1 t sweetener of choice – such as liquid stevia or agave nectar, honey
  • Optional garnish: pecans, walnuts, peanut butter

1.) Mix all ingredients in serving dish of choice (Ex: tupperware container, mason jar, cover a bowl with plastic wrap)

2.) Refrigerate overnight covered. Microwave for 60-80 seconds. Top with optional garnishes. Serve.
