{ Mom’s Famous Banana Bread }

Typically my dessert postings are “southern turned healthier,” but there is NO messing with my mom’s banana bread recipe. I don’t care if I have to run ten miles to burn it off. The inside is moist and fluffy, and the outside has a little crispness.  You can make it with or without nuts, but either way it’s delicious.

  • 1 C very over-ripe peeled bananas, about 2 bananas
  • 1 C Sugar
  • 1 stick softened butter
  • 1 1/2 C Flour
  • 2 eggs beaten
  • 1 t baking soda
  • 3/4 t salt
  • 1/2 C sour cream
  • 1 t vanilla
  • 1/2 C walnuts or pecans

1) Preheat oven to 350.

2) Grease your 4×8  loaf pans with butter.

3) Cream butter and sugar. Next add eggs, vanilla, flour, salt, baking soda.

4) Mash bananas lightly in separate bowl, then add to large mixing bowl and mix with sour cream and remaining ingredients except nuts.

4) Chop nuts roughly and fold into batter. Leave some whole to put on top.

5) Bake for 50 minutes. Check center with a toothpick to make sure it comes out clean. Cooking time depends on the size of the baking dish, so watch carefully.
